The homemade cranberry pomegranate simple syrup in this cocktail recipe multitasks as a delightful glaze for ham or an unexpected topping for pancakes. You can also make easy alcohol-free beverages on the fly by mixing sparkling water a spoonful of syrup.

Makes 2 servings

Ingredients

For Simple Syrup:

  • 2 cups fresh cranberries
  • 2 cups sugar
  • 1 cup Red Crown Pomegranate Juice (Original or With Pulp)
  • 1 cup water

For Cocktail:

  • 4 ounces vodka
  • 4 ounces Red Crown Pomegranate Juice (Original)
  • Juice of ½ lemon
  • 3 ounces simple syrup
  • Whole cranberries for garnish (optional)

Instructions

For Syrup:

  • Put cranberries, sugar, juice and water in saucepan over medium-high heat. Bring to a boil and lower heat to medium-low.
  • Let cook for additional 10 minutes or until berries are falling apart.
  • Strain through fine mesh strainer into medium bowl. Let strainer sit over bowl until all liquid has passed through and syrup has cooled to room temperature, about 1 hour.
  • Discard the solids and store syrup in airtight container in refrigerator up to 2 weeks.

For Cocktail:

  • Add vodka, pomegranate juice, lemon and syrup to cocktail shaker. Top with ice.
  • Shake vigorously, strain into martini glasses (chilled glasses are a nice touch!), and garnish with cranberries (optional).
