The homemade cranberry pomegranate simple syrup in this cocktail recipe multitasks as a delightful glaze for ham or an unexpected topping for pancakes. You can also make easy alcohol-free beverages on the fly by mixing sparkling water a spoonful of syrup.
Makes 2 servings
For Simple Syrup:
- 2 cups fresh cranberries
- 2 cups sugar
- 1 cup Red Crown Pomegranate Juice (Original or With Pulp)
- 1 cup water
- 4 ounces vodka
- 4 ounces Red Crown Pomegranate Juice (Original)
- Juice of ½ lemon
- 3 ounces simple syrup
- Whole cranberries for garnish (optional)
Put cranberries, sugar, juice and water in saucepan over medium-high heat. Bring to a boil and lower heat to medium-low.
Let cook for additional 10 minutes or until berries are falling apart.
Strain through fine mesh strainer into medium bowl. Let strainer sit over bowl until all liquid has passed through and syrup has cooled to room temperature, about 1 hour.
Discard the solids and store syrup in airtight container in refrigerator up to 2 weeks.
Add vodka, pomegranate juice, lemon and syrup to cocktail shaker. Top with ice.
Shake vigorously, strain into martini glasses (chilled glasses are a nice touch!), and garnish with cranberries (optional).
