While mezcal has a unique appeal, this drink also works with tequila. Take care with the final addition of deep red pomegranate juice to the pale orange paloma - pour in very slowly or pour over the back of a spoon to create a lovely ombre effect.Makes 2 servings
Ingredients
4ouncesmezcal
½of one lemon, cut into pieces
1piecepiece ginger, approx. 1 inch cubed, peeled and thinly sliced
4ouncesgrapefruit soda
2ouncesRed Crown Pomegranate Juice (Original or With Pulp)
Fresh thyme sprigs for garnish (optional)
Instructions
Place lemon and ginger in cocktail shaker and muddle* to release flavours (you can use a wooden spoon if you don’t have a cocktail muddler).
Add mezcal and top with ice and shake vigorously to chill.
Fill two lowball glasses with fresh ice, and strain mezcal mixture over top. Add grapefruit soda.
Very slowly pour in pomegranate juice to each glass, using the back of a spoon if desired. Garnish with thyme sprigs (optional) and serve.
