Flushed Paloma

While mezcal has a unique appeal, this drink also works with tequila. Take care with the final addition of deep red pomegranate juice to the pale orange paloma - pour in very slowly or pour over the back of a spoon to create a lovely ombre effect.
Makes 2 servings

Ingredients

  • 4 ounces mezcal
  • ½ of one lemon, cut into pieces
  • 1 piece piece ginger, approx. 1 inch cubed, peeled and thinly sliced
  • 4 ounces grapefruit soda
  • 2 ounces Red Crown Pomegranate Juice (Original or With Pulp)
  • Fresh thyme sprigs for garnish (optional)

Instructions

  • Place lemon and ginger in cocktail shaker and muddle* to release flavours (you can use a wooden spoon if you don’t have a cocktail muddler).
  • Add mezcal and top with ice and shake vigorously to chill.
  • Fill two lowball glasses with fresh ice, and strain mezcal mixture over top. Add grapefruit soda.
  • Very slowly pour in pomegranate juice to each glass, using the back of a spoon if desired. Garnish with thyme sprigs (optional) and serve.
