Pomegranates should have thin, tough, unbroken skin that ranges in color from pink to deep red. When you’re choosing a pomegranate, focus on the weight rather than the color — the heavier the pomegranate, the more juice it contains.

It’s best to eat the seeds (called arils) right away, but they will last two weeks in a sealed container in the refrigerator or for many months frozen. Unopened pomegranates can last up to one month on the counter or two months in the refrigerator.
